The following is a recipe I tried for the first time yesterday afternoon after a friend gave me two huge sweet yellow onions. It is from Pinterest titled: “Vidalia Onion Pie” created and published by Steve Cylka on January 4, 2024 - (The Black Peppercorn). I did not have Vidalia onions, but those labeled simply “Sweet Yellow Onions”. I brought the pie to church this morning to share at fellowship. It was an instant hit! So here is the recipe in my own words.
VIDALIA (SWEET) ONION PIE
CRUST
2 ½ cups crushed crackers (Ritz or saltines)
⅓ cup melted butter (I used more than this)
FILLING
2 tablespoons butter
2 ½ cups thinly sliced sweet onion
¾ cup milk
2 eggs
½ tsp. Salt
¼ tsp. Pepper
A dash of hot sauce
¾ cup shredded cheddar
½ tsp. Dried parsley (if desired)
Prepare a nine inch pie dish with spray coating or shortening and flour.
Preheat the oven to 350 degrees F.
Mix melted butter with crushed crackers until butter is absorbed and all the crackers are wet with the butter.
Evenly spread the crackers into the bottom and sides of the pie dish.
Heat the 2 tablespoons of butter in a skillet over medium heat and add sliced onions. Saute the onions for 10 minutes until tender.
While the onions are cooking, whisk together milk, eggs, salt, pepper and hot sauce.
Once the onions are tender, spread them evenly over the cracker crumb crust.
Pour egg mixture on top.
Sprinkle cheddar cheese evenly over top of egg mixture.
Sprinkle with dried parsley.
Bake at 350 degrees F. for 40 minutes.
Let stand for five minutes. Slice and serve.
